Anyone that has spent the day with Carl knows that he is a super picky eater. We introduced him to all sorts of foods early on that I made from scratch (all except pureed meat, I could never get the texture right). So when he started to eat table foods, it became very frustrating when he refused everything. I read countless articles on how to get your child to eat a variety of healthy and nutritious foods, and yet none of their suggestions have helped Carl become an adventurous eater (actually, I’d settle for an average eater).

One of our favorite items when going out to eat at Mexican Restaurants (and Cheesecake Factory) are sweet corn cakes. Carl absolutely loves this decadent side dish. I have been trying for a few years to find a recipe to recreate it at home and I finally found one that works with adjustments from Allrecipes.com. I am amazed at how close the flavor and texture is to our nearby Mexican Restaurants (especially Don Pablo's).
